Nori
How Japanese Nori Is Evaluated in High-End Sushi
Nori is commonly classified into different grades, which indicate its overall quality and intended use.
At the top are premium grades, sometimes labelled as Grade A or “Gold.” These are reserved for high-end applications such as omakase sushi and handrolls. They offer the best balance of colour, texture, aroma, and flavour.
Mid-range nori is often used in sushi rolls. While still good in quality, it may lack the depth of flavour or perfect texture required for more refined dishes.
Lower-grade nori is typically used for home cooking or large-scale catering. It serves its purpose as a wrapper but does not contribute significantly to flavour.
Some suppliers use alternative grading systems, such as Gold, Silver, or Blue labels. Regardless of the naming, the evaluation criteria remain consistent: appearance, texture, aroma, and taste.
Understanding these grades helps chefs choose the right nori for each dish, ensuring both quality and balance.
