What Makes High-Quality Nori Different?

Not all nori is created equal, and the differences become especially noticeable in sushi.

High-quality nori stands out through its balance of structure and flavour. It is thin but firm, providing a crisp bite when freshly toasted. This crispness is crucial, as it enhances the overall texture of sushi and contributes to a satisfying eating experience.

In contrast, lower-grade nori often lacks this structure. It may be thick, chewy, or difficult to bite through, which can disrupt the harmony of the dish.

Another distinguishing feature is flavour. Premium nori has a natural umami richness and a slight sweetness that enhances the ingredients it wraps. Lower-quality nori tends to taste flat or may even leave a bitter aftertaste.

Professional chefs often perform a simple test by holding nori up to the light. High-grade sheets reveal a fine, even fibre structure with slight translucency, while lower-grade nori appears opaque and inconsistent.

These small details make a significant difference in high-level sushi, where every component matters.
